Abstract Context: An increase in robusta coffee (Coffea canephora P.) production in Indonesia resulted in an increase in coffee waste, one of which is coffee bean skins or cascara. Cascara robusta coffee contains phenolic compounds such as flavonoids that have the potential as natural antioxidants. Antioxidant compounds from robusta coffee cascara can be obtained through extraction with appropriate solvents in order to maximize the active components of the extracted ingredients. The solvents can be distinguished according to the degree of polarity. Objective: This study aims to determine the solvent that can produce the highest antioxidant activity in coffee cascara extract based on the level of solvent polarity. Method: Compound extraction was carried out by stratified maceration method using n-hexane solvent, ethyl acetate and 70% ethanol then determination of antioxidant activity was carried out by DPPH free radical suppression method. Results: n-hexane extract, ethyl acetate extract, and 70% ethanol extract of robusta coffee cascara have antioxidant activity. Conclusion: The results of antioxidant activity obtained 70% ethanol extract from robusta coffee produced the highest antioxidant activity based on IC50 value of 41.3780 ppm compared to ethyl acetate extract of 70.4007 ppm and n-hexane extract of 634.9758 ppm.
