Abstract
Application of E-Nose for Detecting Freshness Levels of Beef Using Fuzzy Inference System (FIS) Mamdani Asep Denih1 , Irma Anggraeni2 , Andini Delia Pratami3 1,2,3Department of Computer Science, Faculty of Mathematics and Natural Science, Pakuan University, Bogor, West Java, 16143, Indonesia Abstrack This study investigates the application of the electronic nose (E-nose) tool combined with the Fuzzy Mamdani method for detecting the freshness level of beef. The research aims to provide a rapid and accurate assessment of beef freshness by analyzing volatile gas emissions produced by the meat, emphasizing the critical role of freshness in food safety and quality within the meat industry. The methodology involves collecting beef samples from various sources and utilizing the E-nose to detect specific gas compounds indicative of freshness. Findings reveal that this integration effectively categorizes beef freshness into three categories: Fresh, Fairly Fresh, and Not Fresh. This approach enhances the reliability of freshness evaluations, minimizes the risks of food poisoning, and contributes to consumer awareness regarding meat quality, ultimately supporting improved standards in meat processing and quality control.
