This canteen faces significant challenges in achieving maximum profits. Common issues encountered at Kantin Misel include constraints due to unpredictable fluctuations in raw material prices and declining productivity leading to losses. Therefore, a study is conducted to determine the optimal production quantity that maximizes profit for the food products offered at Kantin Misel. Additionally, a sensitivity analysis is performed to identify the limitations resulting from changes in constraint functions to ensure profit stability is maintained. In the study, data on profit per unit of product, and raw material requirements per unit of product, and raw material availability were used. The variables employed in this research were product variations, product profits, and raw material requirements per unit of product. The method applied in this study was the simplex method in linear programming. The research findings revealed that the optimal products for this UMKM are 2 portions of siomay,54 portions of lontong sayur, 114 portions of lontong bumbu, 30 portions of pempek, and 62 portions of bakso cilok. Sensitivity analysis conducted identified that the most influential changes on the optimal products were related to the raw materials: peanuts, rice, and celery. The minimum constraints for the availability of peanuts are 1978.679 gr, for the rice are 4906.746 gr, and for celery are 495.28 gr, thereby ensuring the stability of the availability of these raw materials. Keywords: optimization, production, simplex method, sensitivity analysis Abstrak: Salah satu Usaha Mikro Kecil dan Menengah (UMKM) yang ada di daerah Sentul yaitu Kantin Misel. Kantin ini memiliki kendala penting yang dihadapi dalam rangka pencapaian keuntungan yang maksimal. Permasalahan yang umum terjadi di Kantin Misel yaitu terkendala dengan kondisi perubahan-perubahan harga bahan baku yang tak menentu dan penurunan produktivitas yang mengakibatkan kerugian. Oleh karena itu dilakukan penelitian untuk menemukan nilai jumlah produksi yang memaksimalkan keuntungan pada produk makanan Kantin Misel dan melakukan Analisis Sensitivitas untuk mengetahui batasan-batasan akibat adanya perubahan fungsi kendala agar kestabilan keuntungan terjaga.
